So I deleted an already “turned off” eSIM from a trial a couple of months ago. That didn’t do anything. Finally I went to Settings | Cellular | Calls on Other Devices, and turned off “Allow Calls on Other Devices”. And that seemed to have done it. I have no idea how/why it was turned on, or why it was fine for a couple of months until a week ago… possibly due to iOS upgrade.
