[D] Hugging Face Models

Why do we need to build models from scratch when we have Hugging Face and OpenAI models available, which are better trained and exhibit higher accuracy on large amounts of data? We can simply utilize APIs to access these models. What is the significance of the entire field of Data Science/ML in this context ?
