Hi, I have a laptop that I converted into a Ubuntu server after removing its broken screen. Now I want to switch it to Ubuntu Desktop, but I have a problem with the HDMI output. When I connect it to a monitor, it shows me an extended screen instead of the installation screen (the one that asks me to try or install Ubuntu). How can I fix this?

You can try the Windows+P shortcut. It should allow you to tweak the display configuration.
