I’ve got a farm, animals, an enchanting room, a mine, and a house. I’ve traveled around and found mineshafts and dungeons, I have yet to find a desert temple because there are zero deserts around me. I’ve plundered a few villages and I’ve been to and explored the nether. I’m trying to think of something to do that isn’t killing the ender dragon.

I would suggest build some roads in the overworld. It makes the world feel more lived in. Look up some path designs, they can be much more detailed than a simple line of path blocks.
