According to this recent study: https://youtu.be/Fa7V_OOu6B8?si=p0_fvQyO_G5J-uPJ , (see the 10 minute mark), black bars used with an OLED TV caused burn in after only 700 hours of use. Should I be worried that the same is going to happen with the SteamDeck OLED using EmuDeck given that all the emulators use bars of some sort?

It’s only natural. But OLED tech has advanced so much that burn in is something that you shouldn’t worry about for a LONG time, and even if you purposely try to cause it, it’ll take extreme test and trials for you to make it happen. If it’s similar to how Nintendo has their Switch OLED it’s really good. No need to worry and by the time we need to worry we’ll be on to Steam Deck 2.5-3 or something by then lol.
