I have an Archer A7 at home and I have no issues with. We also use a single TP-Link AC750 WiFi Extender for a part of the house that otherwise has a weaker signal.
Recently, we started using Frontier for fiber and they gave us a free eero Pro 6E. Now, I have a choice to either:
a) sell the eero Pro 6E on ebay (can get around $100)
b) replace the Archer A7 with the eero Pro 6E
I am figuring the “cost” of eero is essentially what I can get for it if I sold it, so my question is: Does the eero Pro 6E do anything better than the Archer A7 that would be worth $100 to upgrade?

Well I can tell you what the eero does not have: more than one LAN port. I sold my eero 5 when I eventually realized I need at least 3 wired connections. After a year of use, it started randomly dropping my devices connected over wifi and I couldn’t get them to re-connect. It also has very limited custom config options unlike a traditional router where you can set everything yourself including flashing the firmware. Based on your description, it seems you don’t really need a mesh network too, so I think you’re better off with your current setup.
