Some backstory (skip this and go to the “Now to the point” part if you don’t care about a random anecdote) My last iPhone was the iPhone 3G, I had it for about a month before breaking the free 5000 SMS limit and I had to pay my dad my phone to pay the bill lol.
Since then and up until about 3 years ago I was one of those nearly militant anti-apple people. Then I got to use some products and 6 months later I got the MacBook for studies. I had the Google Pixel 7 Pro and experiencing what the Google “ecosystem” had to offer and eventually having to return the phone as my screen self-destructed (amongst many other issues) pushed me to the point where I decided it was time to try the “other side”.
Now to the actual point: I have been on Android basically forever, except for the past 2 months where I have been using a cracked iPhone 8 from 2017.
I know Apple people will tell me that everything is just “so easy” but I kind of disagree. So I would need some help doing “the switch”. I’ll try to be as clear as possible but I haven’t even received my iPhone 15 Pro yet:

Syncing: I don’t have iCloud. I have 2TB on Drive, can I sync and backup in the “same” or similar way? I also have a MacBook Air M1, what will automatically sync in terms of photos, notes, etc?

NFC: Does iPhone users have the ability to use NFC tags etc? I have some at home which I use to sync with my Home Assistant or is it just for Apple Pay?

General usage: This may be a bit diffuse, but on my MacBook I have found ways of getting around things rather than actually knowing what I am doing. Are there any finger gestures, button clicks or whatever I should learn?

Any tips: I will happily accept any tips that I can get to ease the transition. Bonus tips for any tips for structuring stuff up. I have ADHD so any productivity tips are greatly appreciated.
I use my phone quite a lot, I run quite a lot and use Strava for that. I play some games, watch YouTube, use the camera a lot.
