All the NICs are 1GB and my 24 port managed TP-Link switch is 1GB, yet when I transfer data across my LAN I only get 100MB. My cables are all CAT 6 & 7. Any ideas?

Are you sure you mean MB/GB in these instances?
Your switches and NICs will be 1Gb/s (gigabit per second) not 1GB (gigabyte).
When your computer reports 100MB/s, if that is indeed MB, then your transfer speed is actually around 800Mb/s since 1 bit = 8 bytes.
If your computer is reporting 100Mb/s (I.e. 12.5MB/s), then something else is up.
Bits are small b. Divide by 8 to get your speed in bytes - gigabit is approximately 125 megabytes per second. Unless you are saying you’re only getting 100 megabits (12.5 megabytes per second) then I have no idea.
