Looking for Sandbox games to mess around with

The one game I could never get into was space kerbal one where you make space rockets.and no man’s sky.

But I guess I’m wanting more relaxed sandbox.

And maybe a bonus where you could play as a bounty hunter

Or games with fishing mechanics as well or archery tournaments
