What is the appeal of Rogue like/lite etc. Dying in a game and having to replay content over and over annoys me greatly.
More importantly, I would love something like Delver but not a Rogue. I enjoy character/gear progression a lot. Losing everything when I die (which I do often) ruins the game for me but I really want to enjoy this type of content.
Progression in a Roguelike is identical to any traditional MMO, expect you fast forward your progression into a 20-30minute session.
Roguelikes have anywhere from 5-10 core builds (think of them like classes in RPG) each core build might have differences between them (I’m thinking like Specs in WoW).
So your typical roguelike might have dozens, maybe hundreds, of different builds you can mix, match, customize.
I don’t normally view dying in a roguelike the same way you are looking at it. I think of it as “okay I played that class what happens when I try X.”

Deck building is the most common system for these games now and the traditional classic to introduce the genre is Slay the Spire
RPG: since you mentioned liking these Hades might be the best match for you.
FPS: My personal favorite is Risk of Rain 2
Internet Historian: if you want to play the very first from a historical point, but also extremely good game play Binding of Isaac
