I have dozens of chest/shulker monsters and I really cant be fucked to actually organize them into a manual system, so I want an automatic sorter.

Heres my problem with that though: I dont want to have a double chest for every individual item I am sorting and I will not make one for every item in the game (Im not there yet lol)

So my question remains, how big would I actually need it to be? 100 chests? 200? Any advice on this would be much appreciated

I like one that takes care of all the stuff I get mining. After a long trip in the mines I just dump my sulkers in it. Deep slate, cobble, ores, amethyst…anything that you pick up mining.

Make a Multi-Item Sorter. I recommend the Moony MIS V5. It works at almost hopper speed, is 2-wide tileable, and is not all that hard to put together compared to other multi item sorters. You’ll have to come up with a bunch of categories, but it’s easy to add more items to the filters on the fly so it’s pretty flexible. I think I covered most categories I wanted with 50 or so slices. A large machine, but you can find ways to hide it.

WARNING: DO NOT UNLOAD THIS THING WHILE IT’S RUNNING. YOU WILL REGRET IT WHEN YOU HAVE TO PLAY PLUMBER.

Depending on what you are wanting to store, I personally; only store base items. I only store the most basic resources, everything that is needed to craft everything else; the SI of items.
