On a car made in the last several decades? Not shit. They all have knock sensors to retard timing to a safe level if the octane is lower than what’s needed at that moment (depending on ambient/intake temps, load, etc).
Will a car lose a few horsepower? Possibly. Hardly makes a difference for most people on their commute.

I’m not sure I’d go with a $100 dollar catalytic converter on anything (though I had an ebay 150 dollar cat on my Subaru and it had no issues), but I sure as hell wouldn’t pay $2500 for one for a 10 year old Juke either.

The back has Lexus ES vibes and I like it. The front seems like a weird mix of Corolla, the Avalon that went out of production and something else I can’t put my finger on, but I’m sure it will grow on me.
Anything that will hit 60 in under 8.5 or 9 seconds is good 'nuff for regular daily driving.
Hell I drive an old Forester with a worn out engine that I’m sure I couldn’t get to 60 in under 10 if I abused the hell out of it … and I still very rarely use the entire rev range or all it’s power.
Sure, my other car that will do 60 in about 7 is a lot more relaxing and fun to drive, but I have no issues actually merging or keeping up with traffic even in the slower one.

Is it proper to use distilled or de-ionized water? Of course. Will mineral build-up from tap water eventually clog a radiator? Possibly could, but I’m willing to bet anything that the plastic end-tanks are going to fall apart and it will have to be replaced anyway, long before it’s clogged.
Based on the picture and not having a clue about vehicle and your driving habits, I can say with certainty that you could have left them in until they’re worn down.
